I love a hearty cream soup but not the calories that usually go along with it. Well, this chowder recipe that I've adapted fits the bill on a chilly, gray day. Even the kids like it!
Light & Lean Corn Chowder
1 lb frozen corn (or 4 large fresh ears of corn, cut off cob)
1 sweet onion, chopped
1 celery rib, chopped
1 TB butter
1 1/2 c cubed Yukon gold potatoes, skin on
1/2 package of extra lean turkey bacon, cut into small pieces and cooked
1 c water
2 tsp chicken bouillon granules
1/4 tsp dried thyme
1/4 tsp pepper
1/2 tsp salt

6 TB flour (you can use white or wheat)
3 c fat free milk
Combine all ingredients except flour and milk in crock pot. Cook on high 3-4 hours or low 8-9 hours until potatoes are tender. Mix flour and milk well (I put it in a large canning jar and shake to combine). Stir into chowder slowly until thickened.
each 1 cup serving has approx 200 calories

I have made this one many times! I love to use it as a base for any chowder, corn, halibut, clam, etc. It's fantastic!
