Blueberry Baked Oatmeal


Blueberry Baked Oatmeal

1/2 c rolled oats
1/2 c unsweetened almond milk
1/2 c egg whites
1/2 tsp baking powder
1/2 tsp cinnamon
dash salt
1 tsp or packet of truvia or sweetener of your choice
1/2 c fresh or frozen berries (I used fresh blueberries)

Directions: Spray a large 16 ounce ramekin (or use two small ramekins) with nonstick cooking spray. Mix all ingredients together in the ramekin except the berries. Stir well to incorporate then add berries. Save a few for topping if desired. Microwave for 3 minutes until puffed and no longer squishy in center. Or bake at 350 degrees for 25-30 minutes. I baked mine and it had a nice, crunchy top. Serve warm.

  1. I'm excited to try this one. I've been seeing tons of recipes for baked oatmeal on Pinterest but haven't actually tried one yet. I'm glad you did so now I know it will be good!
