Cinnamon Swirl Pancakes

Cinnamon Swirl Pancakes


I made the kids baked pancakes this morning, and while they were good, they were a little plain, so I tried a little experiment. And it was delicious!

Pancake:
1 1/2 Cups Milk
2 Eggs
4 T. Melted butter
2 T. Sugar
2 Cups Flour
4 tsp. Baking powder
1/2 tsp. Salt

Cinnamon Topping:

4 T. Melted butter
3/4 Cup Brown sugar
2 T. Cinnamon

1.Beat milk, eggs and butter.
2. Add sugar, flour, baking powder and salt. Beat until there are no more lumps.
3. Grease a 11X17 cake (or jelly roll) pan. Pour batter in. I did have to spread mine out. It will seem really thin.
4. Mix topping and drop onto pancake batter.
5. Swirl topping into batter with knife.
6. Bake at 350 for 8-10 minutes.

I drizzled a little vanilla frosting on mine (while it was hot), but cream cheese would probably be good too.

It was the perfect mix of pancakes and coffee cake and super easy to make. Eva told me she wants it for lunch and dinner, so I guess it's okay. :)
