Meatloaf Muffins.
1 teaspoon olive oil
1 cup finely chopped onion
1/2 cup finely chopped carrot
2 garlic cloves, minced
1 cup ketchup (divided)
1 1/2 pounds ground beef (extra lean)
1 cup oats
2 tablespoons prepared mustard
1 teaspoon worcestershire sauce
1/4 teaspoon pepper
1 teaspoon salt
2 large eggs
cooking spray
Preheat oven to 350º
Heat olive oil in large skillet over medium high heat. Add chopped onion, carrot, and garlic. Saute 2 minutes, cool.
Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl.
Spoon the meat mixture into 12 muffin cups coated with cooking spray. Top each with a bit of ketchup. Bake at 350º for 25 minutes or until a thermometer registers 160º. Let stand 5 minutes.
NOTES: I love this recipe and have actually never made meatloaf any other way, mostly because I like that it cooks so quickly. I don't ever measure the carrot, onion, or garlic but just throw in as much as seems good at the time, I also add other vegetables occasionally, I just put them through the food processor first. I add other spices too sometimes if I feel like, ie: liquid smoke, oregano, basil, etc just depending on my mood. I use whatever type of mustard I have, sometimes it's the cheap yellow stuff. I've also used ground deer for this with yummy results. The leftovers are great to freeze, especially because they can be taken out one serving at a time if need be. Enjoy!

I'm always looking for meals that I can freeze so I will definitely be making this one! I've never made meatloaf before but it sounds delicious.
