Yum-Yum Bars



These cake mix bars are DELICIOUS!  I am going to post the recipe for the lemon variety but we have made this recipe will all sorts of different flavors by switching out the cake mix and frosting flavor.  The last one we did was blue velvet cake and cherry frosting.  So good.

1 box lemon cake mix
1/2 cup butter, melted
4 eggs
zest of one small lemon (optional)
1 (8oz) package cream cheese, softened
2 1/2 cups powdered sugar
1 (12oz) container lemon frosting

Directions:
1. Preheat oven to 350º
2. In a medium mixing bowl, mix together the cake mix, butter and one of the eggs.  Spread evenly in a lightly greased 13x9 baking dish and lightly press.
3. In a separate bowl, mix together the cream cheese, powdered sugar, the three remaining eggs, and the lemon zest.  Pour over cake mixture.
4. Bake for 30-35 minutes or until lightly browned.
5. Frost with the lemon frosting while still warm (not hot).  Cool completely before cutting.

Make approx 24 bars.
