1 box lemon cake mix
1/2 cup butter, melted
4 eggs
zest of one small lemon (optional)
1 (8oz) package cream cheese, softened
2 1/2 cups powdered sugar
1 (12oz) container lemon frosting
Directions:
1. Preheat oven to 350º
2. In a medium mixing bowl, mix together the cake mix, butter and one of the eggs. Spread evenly in a lightly greased 13x9 baking dish and lightly press.
3. In a separate bowl, mix together the cream cheese, powdered sugar, the three remaining eggs, and the lemon zest. Pour over cake mixture.
4. Bake for 30-35 minutes or until lightly browned.
5. Frost with the lemon frosting while still warm (not hot). Cool completely before cutting.
Make approx 24 bars.
