Ingredients
1 1/2 cups sugar
3 tbsp. cornstarch
1 c. vinegar
1 c. chicken broth
7 tbsp. ketchup
2 tbsp. soy sauce
6 to 8 boneless, skinless chicken breasts (or if they are really huge like mine were today, 4)
Preheat oven to 325.
Combine sugar and cornstarch. Add vinegar, broth, ketchup and soy sauce and whisk until smooth. The sauce will be a reddish-orange.
Place chicken in greased 9x13 baking dish. Cover chicken with sauce and bake for 1 and 1/2 hours. Sauce will thicken and darken.
A lot of the recipes I found wanted you to bread and fry the chicken first, but I avoid frying because I hate the clean up so I just baked mine and then shredded it in my KitchenAid (with the paddle) for about 30 seconds. We ate in on rice but I am going to use the leftovers in tortillas.
