I am a salmon lover but I've had mixed results when I try to cook it without the grill, but I tried this simple method attributed to The Pioneer Woman last night for dinner and it turned out a-mazing!
I had frozen Atlantic Salmon filets from Costco. I thawed one overnight in the fridge.
Line a cookie sheet with aluminum foil and put the salmon filet in the center. Drizzle with olive oil and sprinkle with kosher salt and fresh ground pepper. Place in a cold oven on the middle rack. Set oven to 400 degrees and bake for 25 minutes. The salmon was crispy on the outside and perfect on the inside. It was so yummy!! And couldn't be easier!
