Lentil Sausage Soup



1 yellow onion
3-4 carrots
1 large can diced tomatoes
4-8 sausages
1 1/4 cup lentils
water
butter
minced garlic
bay leaf

To Do:
chop onion and carrot
slice sausage and brown
In large pot brown onions with a Tbsp or so of butter, just as they turn clear add the carrots.  Once the onions brown add 1 1/4 cup of lentils, 2 1/2 cups water, garlic, and bay leaf.  Bring the mixture to a low boil and add sausage and tomatoes.  Let simmer for 25-30 minutes.  It is done when most of the liquid is gone and then lentils are tender.  Salt and pepper to taste.
