Creamy Potatoes with Ham and Peas



You Will Need:

4-5 Medium red potatoes
1 cup frozen peas
1 cup pearl onions
2 cups ham (cooked and chopped)
1 cup mushrooms chopped (optional)
1 can evaporated milk (12 oz)
1 1/2 Tablespoons butter or margarine
1 1/2 Tablespoons flour
dash of salt
dash of pepper

To Make:

Boil whole potatoes until almost done (skins should not be falling off) about 15 minutes.
Add peas, onions, mushrooms, and ham and boil 3 more minutes.
Drain and cut potatoes into bite size pieces.
In a small saucepan melt butter of margarine.
Stir in flour, salt, and pepper.
Stir in evaporated milk all at once (a whisk makes mixing easier).
Cook and stir over medium heat till thickened and bubble.
Cook and stir one minute more.
Pour sauce over potatoes, stir, season to taste, serve and eat.
Serves 4
