4 tomatoes
carrots, potatoes, zucchini, etc, very coarsely chopped
olive oil
1 onion coarsely chopped
4 whole cloves garlic
2 cups chicken broth
3 Tbsp fresh basil
salt
pepper
2 Tbsp balsamic vinegar
1 cup milk or heavy cream
In large frying pan sauté garlic and onion in olive oil for a few minutes then add coarsely chopped veggies and saute for a few minutes more. Add chicken broth, bring to boil, then lower temperature and simmer for 20 minutes. Cool, add fresh basil. Pour mixture into blender and blend until desired consistency.
Return mixture to frying pan and add balsamic vinegar and heavy cream. Stir and heat until warm. Add salt and pepper to taste.
