Sushi Rice
Ingredients:
3 cups Japanese style rice (short/medium grain)
6 cups water
1/3 cup rice wine vinegar
3 Tbsp sugar
1 tsp salt
Wash and rinse the rice well then cover with cold water and let sit for 30 minutes. Drain rice, add 6 cups water and cook in rice cooker.
Prepare sushi vinegar by mixing rice vinegar, sugar, and salt in a small pan. Put the pan on low heat and heat until the sugar dissolves, cool the mixture.
Once the rice is done pour onto a large pan or plate. Sprinkle the vinegar mixture over the rice and fold the rice very quickly, without smashing it. To cool and remove the moisture of the rice well, use a fan as you mix it.
Makes 4-6 servings. Best used right away.
